Caught at the height of the season off the coast of Saint-Gilles-Croix-de-Vie, vintage sardines reflect a tradition of excellence perpetuated since 1887. These sardines, with their exceptional fat content (over 12%), are true vintages to be aged for up to 10 years, taking care to turn them over every six months. A decade that allows them to tenderize and candy, an essential ritual for appreciating all the qualities of these precious sardines.
