This tomato tapenade with Bayonne ham and Espelette pepper can be enjoyed as an aperitif on toast or fresh bread, as a starter with hard-boiled eggs or bruschetta, or as an accompaniment to pasta.
Piment d’Espelette is a spice with PDO (Protected Designation of Origin) status.
A sweet spice from the Basque region, harvested from August to November, the mature Espelette chili pepper is carefully selected and hand-harvested, then naturally dried for at least 15 days in the open air. It is then put in the oven for several hours and ground into a powder.
Piment d’Espelette is an excellent substitute for pepper, a flavor enhancer that doesn’t distort flavors but reveals them, with a very slightly fruity taste.
The idea of combining the Espelette chilli pepper raises the flavours without setting them on fire! This tomato tapenade with Bayonne ham and Espelette pepper contains small pieces of Bayonne ham and has a melt-in-the-mouth texture.
Ingredients: Bayonne ham (20%), crushed tomatoes, tomato paste, garlic, onions, sugar, PDO Espelette pepper (0.5%).
