Whole Landes duck foie gras with Espelette pepper, from traditional ducks fed GMO-free grain corn and raised in the open air for a minimum of 103 days.
A sweet spice dried in the sun in the Basque Country, Espelette pepper prolongs the flavor of duck foie gras.
Preparation: Place the whole duck foie gras in the refrigerator a few hours before serving. Take it out 30 minutes before serving to reveal all its melt-in-the-mouth and its best flavours. Carefully place 1 cm-thick pieces on slices of fresh or toasted bread. Above all, avoid spreading it.
Storage: Store away from heat and moisture. Never place duck foie gras in a jar in the freezer, as this may damage its texture and alter its aromas. After opening, keep in a cool place and consume quickly.
The choice of wine must match the smoothness of the duck foie gras. White wines are therefore preferred.
