Our new “Déliga” roach rillette with black garlic (fish caught in Lake Geneva or our Swiss waterways) has a fine, silky texture in the mouth.
Ideal as an aperitif, on toast, on a slice of toasted seed bread, on a fresh traditional baguette, lightly toasted foccaccia or on blinis.
It can also be presented in a verrine for dipping vegetable dips (cucumbers, tomatoes, carrots, fennel, peppers) or used as a seasoning for fish or vegetable tartare.
In this version with Bio Vaudois de Cugy black garlic, the balance between fish and black garlic is subtle. The harmony of these ingredients gives us an atypical local jar, with a very fine, gourmet taste.
This version won a silver medal at the 2023-2024 edition of the Concours Suisse des Produits du Terroir.
